THE NIGERIAN FRIED RICE
Its no arguement that this dish is the number one sought after meal at Owambe and mogbomoya parties across the country and beyond, so here i am from the bounty of my recipe book bringing you the exclusive Reddies Kitchen recipes of both, its not a competition because it stands out in class.
FRIED RICE
Ingredients
6 cups cooked rice
¼- 1/2 cup vegetable oil
1 medium onion sliced
2 teaspoons minced garlic
½- pound liver (cut bite size)
1 pound large shrimp(peeled and deveined)
1 teaspoon pepper sauce(chili sauce)
½ teaspoon thyme
half teaspoon tumeric powder
1 teaspoon white pepper
1 teaspoon curry powder
1-2 teaspoon maggie powder
chicken stock
1 tablespoon maggie liquid or soy sauce(optional)
salt to taste
12-16 oz vegetables(peas, carrots, green beans)
Instructions
Boil the rice in chicken stock with the tumeric powder added and salted to taste.
seive off the liquid
Heat a large wok or skillet on medium high heat with about a tablespoon of vegetable oil.
Stir fry the vegetables with the carrots first and the peas last.
Add the seasonings and the shrimps,liver etc.
Half the vegetables, and gently stir in the boiled rice
Top it of with the remaining vegetables, reduce heat and allow to simmer.
serve hot
